Raspberry Syrup . . . SOOOO YUMMY!!

For those of you who checked out the Albertson's Ad this week I am sure you saw that they have raspberries on sale for .99! Well I never buy raspberries, but I decided this week since they were so cheap I would. I ended up buying two and then not having the slightest idea of what to do with them. This morning we were having waffles so I decided to run a google search and make Raspberry Syrup. I found this recipe and made it and it turned out sooooo good! Here is the recipe. Raspberry Syrup
2 cups fresh or frozen raspberries
1 1/2 cups granulated sugar
1 tablespoon lemon juice
1/2 cup light corn syrup

Puree raspberries in food processor or blender and strain to remove seeds. Measure and add enough water to equal 1 cup.

Combine puree/juice with all other ingredients and bring to a rolling boil. Boil for exactly one minute, counting the time after the mixture comes to a rolling boil that cannot be stirred down. Skim foam. Store in refrigerator.

  1. Hey! Can't wait to try this recipe! If you have any raspberries left, freezer jam is also a delicious use of fruit. All you need is some sugar and a pack of freezer jam pectin - you can find this at any grocery store in the baking section, above the jars. Just follow the directions on the back of the pack! - Jen Lee (from Laura Miller's GS party)
